I needed a chocolate cake this evening,  just cause sometimes you do. I’ve been experimenting with all of my different flours and today, oh my, I nailed it!

I have also decided that photographing chocolate anything in a mug is very difficult, it doesn’t look flash, but it is light, fluffy and cakey. Yahoo!

A simple AIP mug cake that is light, fluffy and cake like. Suitable for vegans, paleo, AIP and other humans.

What you need:

  • 3-4 cup sized ramekin or 2 smaller ones.
  • 1/4 cup green banana resistant starch Natural Evolution is fab
  • 1/4 cup carob powder
  • 1/2 TSP baking powder
  • 1/2 TSP bicarb
  • 2 TSP coconut sugar
  • 1 heaped TSP collagen
  • 1/8 TSP salt
  • 1 tsp coconut oil
  • 1 heaped TSP coconut cream
  • 1/2 cup tiger nut milk

Mix dry ingredients together first, then add wet. Mix together well, make sure there’s no unmixed flour, you will see it start to bubble.

Microwave 1min 20sec based on my 1100w microwave, yours may differ.

You will need the largely sized ramekin as my 2 cups one overflowed. Next time I will divide between two as I don’t have a bigger one.

Serve as is, devour on the spot, top with something creamy if the mood takes you.

Day 3, or is it 4, its all the same so far

Open the app, read the light-hearted 'fun' motivation for the day. Weigh myself, again. Log my meals, again. Try to guess how many calories my homemade, real food has, give up and use the closest match on the American food list. Still have calories to play with each...

Noom day Two, technically day One

So, I weighed myself this morning and yay, I had put on weight and weighed more than I thought when I did my registration, now that's motivating (not!). What Noom fails to do is give you the opportunity to log how your feeling, emotionally or physically. I was...

Noom, what is it and why I signed on for a trial

Noom, we've been bombarded with it being the new solution to weight loss, that doesn't care about food, its changes the way you look at food. Its EVERYWHERE!! I don't know if they're trying to cash in on people's ISO weight gain (apparently that's a thing) or it just...

Why I won’t share my weight loss “secrets”

The most common sentence I hear these days is "Holy S**T, you lost alot of weight". It's not something new, it didn't happen quickly and it wasn't intentional. Comments varying from "how have you done it?" to "you're looking fantastic", to of course "what's your...
