I needed a chocolate cake this evening, just cause sometimes you do. I’ve been experimenting with all of my different flours and today, oh my, I nailed it!
I have also decided that photographing chocolate anything in a mug is very difficult, it doesn’t look flash, but it is light, fluffy and cakey. Yahoo!
A simple AIP mug cake that is light, fluffy and cake like. Suitable for vegans, paleo, AIP and other humans.
What you need:
3-4 cup sized ramekin or 2 smaller ones.
1/4 cup green banana resistant starch Natural Evolution is fab
1/4 cup carob powder
1/2 TSP baking powder
1/2 TSP bicarb
2 TSP coconut sugar
1 heaped TSP collagen
1/8 TSP salt
1 tsp coconut oil
1 heaped TSP coconut cream
1/2 cup tiger nut mylk
Mix dry ingredients together first, then add wet. Mix together well, make sure there’s no unmixed flour, you will see it start to bubble.
Microwave 1min 20sec based on my 1100w microwave, yours may differ.
You will need the large sized ramekin as my 2 cup one over flowed, next time I will divide between two as I don’t have a bigger one.
Serve as is, devour on the spot, top with something creamy if the mood takes you.
